Currently, it’s impossible to create new in-game cameras (you can only edit existing ones or add another display showing them).
The closest you can come is making one of the mirrors display also on the GPS screen, and in fact there is such a mod (albeit quite unrealistic and not too useful), but to answer your question – it’s a nice challenge, but the game’s capabilities straight forward don’t allow such a mod.

I personally like Scania better overall, but Volvo’s interior (especially the steering wheel) actually looks better in my opinion, although the Scania S interior does look quite damn good.
